Trehalöse – TREHALOSE POWDER
Trehalose powder is a disaccharide carbohydrate consisting of two linked glucoses, obtained by processing starch.
Characteristics and applications:
- Sweetening capacity approximately half that of sugar.
- Useful to protect membranes and proteins in drying or freezing processes.
- It has a high water absorption capacity, so it is used to maintain the sponginess of doughs for cakes, biscuits and other elaborations, as well as for specialties with a low water content, preserving the crunchy texture of cookies, crackers and tea biscuits.
- Useful as a protective barrier against humidity, e.g. yogurts with cookies inside.
- It is used to protect structures, for example, proteins in surimi.
- Usual dose: depending on the preparation.
- Available in 700 g and 175 g packs.
